This combination supports binding, thickening and texture generation, while the comparatively low gelatinization temperature enables early starch activation during thermal processing.
Functional performance, however, is closely linked to the surrounding matrix: shear input, residence time, pH, dissolved solids, fat phase and available water all influence the extent of swelling, viscosity expression and final texture.
