Why cooked-and-dried potato flakes change formulation dynamics
AGENAFLOCK are produced by cooking peeled potatoes and applying a gentle drying step that preserves cellular components responsible for rapid water uptake. The resulting flakes show pronounced swelling capacity (notably also in cold water) which stems from partial starch gelatinization and the intact matrix that allows fast rehydration.
In practical terms this means faster processing (less heating or holding), improved yield through higher water retention, and predictable texture formation when used as a binder or bulking agent. For expanded snacks the flakes contribute starch-based cohesion and moisture buffering that stabilize expansion and reduce breakage.
In purées they rehydrate to give a smooth, full potato mouthfeel while supporting clean-label ingredient lists. Laboratory and pilot trials remain the recommended route to define optimal inclusion rates for each process and equipment configuration.
