Application concepts
Snacks — pellets
Concept: Use AGENABACK as bulking/hydrating solid in pellet mixes where it contributes binder properties and matrix integrity after frying or baking.
Processing note: Balance with native starches or modified starches to control expansion and reduce oil uptake; monitor moisture at extrusion and pre-drying to reach consistent pellet hardness.
Snacks — direct-expanded (air/heat expansion)
Concept: Fine potato solids support cell structure and surface texture when formulated with cereals and starches. They help tune crispness and reduce oil absorption by modifying the matrix and surface porosity.
Processing note: Trial blends with different extrusion temperatures and screw profiles to balance expansion and crispness.
Bakery & premixes
Concept: Replace part of the flour or incorporate as a functional powder in premixes to increase water retention, improve mixing homogeneity and extend crumb softness.
Processing note: Best introduced as part of the dry blend; adjust water and mixing cycles to account for the higher water-binding capacity.

How particle size steers performance in doughs and snacks
The functional performance of AGENABACK links directly to its particle geometry and native potato constituents. Finer grinding increases surface area and improves wetting and dispersion in flour systems, which reduces mixing time and ensures homogeneous hydration.
Native potato solids hold and release water through cold-swelling mechanisms; this provides immediate water binding in batters and doughs without full gelatinization, improving process stability and final texture. In extrusion or direct expansion, the combination of fine potato particles and native starch influences expansion, surface crispness and oil absorption - all of which can be tuned through particle grade, moisture control and the balance with other starches or proteins.
