Betaine is a naturally occurring multifunctional compound that plays an important role in metabolic processes and osmotic regulation in humans, animals and plants. Chemically known as trimethylglycine (TMG) or glycine betaine (GB), it is a zwitterionic quaternary ammonium compound with the formula (CH₃)₃N⁺CH₂COO⁻.
Originally identified in sugar beet (Beta vulgaris), betaine is widely present in nature, including in plants such as spinach and wheat, as well as in animals and microorganisms.
