Powder sugar, also referred to as icing sugar or confectioner’s sugar, is finely milled sucrose produced from crystallised sugar that has been ground to a uniform, very small particle size. In many industrial grades, a small proportion of anti-caking agent (potato starch) is added to ensure consistent flowability and prevent agglomeration during storage and processing. The result is a dry, free-flowing ingredient with high solubility and a smooth texture profile.

Icing sugar is in addition a finely ground and specially sieved white sugar, which meets the general quality criteria of EU category 2.
